Healthy Ginger Slice

Ingredients

Base

2 cups oats 
1/4 cup rice syrup
1/3 cup coconut oil (melted)
1 Tbsp flaxmeal
1/4 cup dried fruit (I used chopped apricots and raisins) 
1 tsp brewers yeast (optional for B vitamins!)
1 tsp ground ginger


Topping

1/2 cup rice or maple syrup
1/2 cup coconut oil
1/4 cup Mylk Made base (either coconut or nutty oat)
3 tsp ground ginger




Method

1. Preheat oven to 180 degrees

2. Mix up flaxmeal, Mylk and dried fruit to soak

3. Stir together dry ingredients

4. Melt the coconut oil and stir all wet ingredients into dry until well combined. 

5. Press into 20 x 20cm lined baking dish or loaf pan

6. Bake for 15-20 mins until golden, then let it cool in the dish

Meanwhile, make the topping:

7. Melt coconut oil and mix together all ingredients.

8. Once the base is cool, pour on topping and refrigerate until solidified.
